True to an extent. If everyone is vegan though, people will spend more time raising sheep to live a good life. Also, keep in mind that sheep are animals, and can support themselves in the natural world. There are wild sheep, so they may not go extinct.
They would def go extinct if everyone turned into a carnivore and stopped supporting and breeding sheep. Then, with more consumption of it than production, quantity supplied drops as demand increases... and then..... no more sheep
