Currently, sentries do not fire on empty subs carrying a specialist.

If they did, and the sentry still targets the sub with the greatest number of drillers, on could still employ this technique; send off a sub with more drillers just ahead of a sub with no drillers and a specialist.

I wonder if it would be useful to be able to kill a specialist in a sub as well. I realize the above situation is just as easily employable, but it it just feels off to send an empty sub with a specialist nonchalantly through a sentry's firing range.

That's correct. Sentries only fire on subs with drillers, and they choose the one they can do the most damage to.

If Sentries could start killing off specialists after all drillers are gone, then it would be unclear which specialist they would start with. And killing them all with a 0-driller sub would be too harsh (too easy to make mistakes and leading to frustration). That's the way it used to be a while ago and it was no fun, trust me :-b
